Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¾ teaspoon salt
  • 1 egg
  • ½ cup granulated sugar
  • ½ cup milk
  • cup melted unsalted butter
  • 2 whole oranges for juice and pieces
  • 1 cup semi-sweet chocolate chips

Instructions

  • Preheat oven to 380°F
  • Sift flour, baking powder, salt into a bowl. Set aside.
  • Cut one orange in half, press out juice, reserve.
  • Peel second orange, slice into chunks.
  • In another bowl, add egg, sugar, milk, orange pieces, juice, butter.
  • Mix with hand mixer or whisk until combined.
  • Pour liquid mixture over dry ingredients.
  • Mix minimally to create moist batter.
  • Fold in chocolate chips gently.
  • Spoon batter into silicone or paper-lined muffin pans. Bake for 25 minutes.
